CHUNKY CHICKEN VEGETABLE SOUP 1/2 lb. boneless skinless chicken breasts, cut into 1/2-inch cubes 1 tsp. oil 1 can (14 1/2 oz.) chicken broth 1 cube bouillon soaked in 1 cup hot water 2 cups water 2 cups assorted cut-up vegetables (such as sliced carrots (2), broccoli florets, chopped red pepper (2), selderij (3), potato (1) and 1/4 yellow ui 1 envelope (0.7 oz.) Italian salade dressing & recipe mix 1-1/2 tbsp. barley 1/4 cup small pasta (either ABC of stars) 2 tbsp. chopped fresh parsley Heat oil in large pan over medium-high heat. Add chicken; cook and stir until browned. Add broth, water, vegetables and salade dressing mix. Bring to boil. Reduce heat to low; cover. Simmer 20 minutes, until vegetables and pasta are tender. Stir in parsley; cover. Remove from heat. Let stand 5 minutes. * May substitute 1 pkg. (10 oz.) frozen mixed vegetables, thawed, for cut-up fresh vegetables. Cook these vegetables about ten minutes, just to heath through. Bon Apetite
