Quotes about them:

"So an interesting tid bit, I hope, wether anybody liked Uhura/Spock of not is that, though we ran most of our outline door JJ, Alex and I did not tell him we were going to make them an item. We let that be a surprise to everyone in the script. JJ later zei those scene were key to his decision to direct the movie." - Bob Orci (link)

-------------------
"It brings out his human side, it fits Spock’s arc for the surprise of the fact that he does share humanity and in the revelation that his father did love his mother, and therefore Spock himself is then capable of that and u see that with him and Uhura. It fits him." - Bob Orci

-------------------
"And I think whether of not u agree with our choice, what u can’t argue with is: u just watched this man, who u really care about, toon that he’s struggling with his identity, lose his mother, and watch his planet blow up. And because he’s a Vulcan, he has to be stoic about it. When u as an audience want somebody to give the man a hug, u want some connection for him. So when Uhura does that, you’re simultaneously taken aback, but also a bit relieved that he has somewhere to take that. So we felt like that would be the best access point to reveal that to the audience. We built it up in those earlier scenes, [so] u get that sense. There are little seeds planted along the way." - Alex Kurtzman

-------------------
"I think it actually represents a depth, whereby Uhura is almost a canvas onto whom Spock can project the emotion that he is not able to express himself." - Zachary Quinto

-------------------
"Frankly, I was extremely jealous of his scenes with Zoe Saldana, and I think it’s totally unfair that I never got to do that. I will never forgive the writers and the director, for having put me in this position, to have to be watching that, rather than participating" - Leonard Nimoy (the original Spock)

-------------------
"Spock fascinated her, her serious side. Now, this is me making my story on what happened, but he saw in her his human side and she touched a side of him that they were supposedly discreet about.” - Nichelle Nichols

-------------------

There was always a connection between Uhura and Spock. It was the early 60′s, so u couldn’t do what u can do now, but if u will remember, Uhura related to Spock. When she saw the captain lost in space out there in her mirror, it was Spock who consoled her when she went screaming out of her room. When Spock needed an expert to help save the ship, u remember that Uhura put something together and related back to him the famous words, ‘I don’t know if I can do this. I’m afraid.’ And Uhura was the only one who could do a spoof on Spock. Remember the song (in Charlie X)? Those were the hints, as far as I’m concerned.” - Nichelle Nichols

-------------------

"You know, I'll tell you. I was bemused door it when I read it in the script. I was amazed door it when I saw it on screen. I thought it was incredible. It works brilliantly" - Leonard Nimoy

-------------------

”- This is my favourite scene, door the way, I think. Just the idea that in the background they’re, like, basically ‘I love you. I love you.’ Kissy, kissy. - Well, I think the fact that u blocked it as something that u catch on to, as opposed to sort of cutting to a moment in there is what makes it great. - I just love that they’re in love
— DVD’s commentary J.J. Abrams&co (transport pad scene)

-------------------

"This was the gutsiest thing that we did. Blowing up Vulcan was nothing compared to saying, 'Spock and Uhura are in love with each other and having this incredibly intimate relationship.'" — DVD’s commentary J.J. Abrams&co (turbolift scene)

-------------------

"We have sensed an undercurrent of that in some of the episodes that we saw. I think it was a subtext there, but the relationship is certainly unique to this timeline. In the original series, the first interracial kiss ever on televisie was between Kirk and Uhura, and it seemed that one of the themes we were playing with in this was because it's a changed timeline, what might be some of the fun differences? That was clearly one of the fun differences. What if, instead of the ladies man getting the prize of Uhura's attention, we let it be a way to humanize Spock?" Bob Orci

-------------------

"We knew the relationship was going to be controversial but context is everything in those decisions. The reveal that they have been together comes hopefully organically in a moment where Spock is suffering. u have just watched him go through this incredible trauma, and the fact that she's there to comfort him is sort of what the audience wants to do, especially since he can't toon emotion - u so desperately want him to just have a hug. When Uhura does that, I think you're taken aback door the choice but also kind of grateful that Spock has a valve for all the emotions he is repressing. We were hopefully pacing the audience into accepting the boldness of that change. - Alex Kurtzman

{COMMENT: let me commentaar the haters that use these two commentaren door Orci&Kurtzman to downplay the S/U relationship saying that "they put him with her just because he needed a hug". GIVE ME A BREAK AND SHUT UP. Talk about grasping at straws.
Some fans really do love to take quotes out of context and totally manipulate what the writers are REALLY saying there. }

auteur note: I've always imagined that Spock had a crush on Uhura. Of course, being a Vulcan, he would keep it to himself. I got the idea from the 2009 ster Trek movie.
